Orange Glazed Pork Chops

I've been hit by another cold. I'm calling the boys "my little germ incubators". This is my second cold of the winter and we're only starting!!! So exercise has taken a back seat while I get sleep and lots of it. It's the only thing that helps me when I don't feel good. Which didn't help when it took me about 3 1/2 hours to get home last night. My 1/2 hour drive home became a parking lot because we got a dusting of snow last night and it was so cold there was ice on the roads. I also haven't been good about having a definitive menu plan, but I have had ideas ahead of time what we were having for dinner every night (except last night as I got home at 8 PM!). On Wednesday night, we had a good dinner for a cold winter night. I was so proud of being able to finally recreate a childhood dish that I've aways liked, orange-glazed pork chops. We had orange-glazed pork chops, baked yams and roasted brussel sprouts. Which was a very good combination. The roasted brussel sprouts are easy, cut the bottoms off the sprouts and put into a roasting pan with olive oil and kosher salt. Mix around a bit and put into a 400 degree oven where the yams are baking for about 20 minutes. The recipe for the pork chops are as follows:

6 boneless pork chops
salt and pepper
2 tablespoons of olive oil
3/4 cup orange juice
3 tablespoons orange marmalade
3 tablespoons brown sugar
small touch of champagne or apple cider vinegar

Sprinkle the pork chops with salt and pepper on each side. Brown the pork chops in a large skillet in the olive oil, 5 minutes each side. Combine the remaining ingredients and mix them well. Pour over the pork chops and reduce the heat. Cover and simmer for 40 minutes. If you need to thicken the sauce, take the lid off at the end and increase the heat to simmer until the sauce reduces.

yummy! this sounds good. i love brussels sprouts. we want to make them for our christmas dinner, but are afraid that our extended family will put their nose up!

The Boys Are Here!!!

I'm trying to post this from the hospital Internet access, but I will be able to do this announcement better justice from home, but it is a very odd, but short birth story. They came so fast and furious there was nothing anyone could do. But the boys are in the NICU and doing well. They were born at 31 weeks 5 days gestation on 5/29/2009. I had two steroid shots from when I was admitted until before they were born, so I think that helped. Bad Dreams Go Away Magic Spell

Wow! Two posts in one day!!! I just had to blog about this. Indigo Girl had posted about her daughter having bad dreams and looking for advice. I had to post what we do in our house to keep away bad dreams. I have to admit it was one of my most brilliant mommy moments as I pulled this one out of my a$$ when I came up with it.
